What makes a fountain 'historic'?
We list counters that still mix drinks the old way — carbonated water pulled at the tap, syrup measured by pump, ice cream scooped into the glass — and that have a continuous history behind them, usually in a drug store, five-and-dime or general store.
What to order
A cherry Coke or a lemon phosphate tells you everything about a fountain's syrup. If they'll make it, order an egg cream, a green river, or a hand-spun malt with the extra in the tin.
Why so few are left
Refrigerated bottling and the drugstore chains killed the counter trade through the 1960s and '70s. The ones still standing usually survived because a single family kept the fixtures and the recipe book instead of selling the marble for scrap.
